Seeing an influx of freshly baked banana bread and focaccia on Instagram Stories? Well, it might be time to join the club. Research shows that baking can positively impact your well-being by sparking creativity and relieving stress. We teamed up with chef and author Chloe Coscarelli to bring you feel-good recipes that help you shine from the inside out.

Cinnamon French Toast Bake

Serves 6 to 8

Make ahead tip: Assemble the night before, store covered in refrigerator overnight, and bake in morning!


* 1 (13.5 ounce) can coconut milk (if you don’t have coconut milk, use any non-dairy milk)
* 1/3 cup pure maple syrup, plus extra for drizzling (if you don’t have maple, use agave or sugar)
* 1/4 cup cornstarch
* 1 scoop Rae Wellness Vegan Collagen Boost Powder (Unflavored)
* 1 tablespoon pure vanilla extract
* 2 teaspoons ground cinnamon
* 1 teaspoon ground nutmeg
* 1/2 teaspoon sea salt
* 12 ounces of bread, cubed (I used an Italian loaf and cut thick cubes. You could also use any kind of bread, including sliced sandwich bread.)
* Crumb topping, ingredients + recipe below
* Berries, optional garnish

Crumb topping ingredients

* 1¼ cups all-purpose flour
* 1/2 cup chopped pecans
* 1/3 cup sugar
* 1/3 cup brown sugar
* 2 teaspoons ground cinnamon
* 1/4 teaspoon salt
* 1/2 cup vegan margarine or coconut oil, melted


Preheat oven to 350 degrees. Grease an 8-inch square pan.

In a blender, blend coconut milk, maple syrup, cornstarch, collagen powder, vanilla, cinnamon, nutmeg, and salt until smooth. In a large bowl, toss the bread cubes with the coconut mixture until each bread cube is coated.

Fill the prepared pan with the mixture and lightly press it down with the back of a spoon or your hands. Top with Crumb Topping and press down into the bread.

Bake for 30 minutes. Let cool a few minutes before serving. Cut into portions, then lightly drizzle with maple syrup if desired and serve warm. This can be baked right before serving or earlier that day and then reheated for 8 to 10 more minutes right before serving.

To make the crumb topping: In a medium bowl, combine flour, pecans, sugar, brown sugar, cinnamon, and salt. Add melted margarine and toss with 2 forks, as if you were tossing salad, until it appears crumbly. The crumbs should be the size of small peas.

Orange Chia Seed Muffins

Makes about 12 regular-sized cupcakes or 8 large muffins


* 2 cups all-purpose flour (or gluten-free flour)⁣
* 1/2 cup sugar⁣
* 1 scoop Rae Wellness Vegan Collagen Boost Powder (Honey Citrus)⁣
* 1 tablespoon baking powder⁣
* 1/2 teaspoon sea salt ⁣
* 1/2 teaspoon ground cinnamon⁣
* 1 cup orange juice⁣
* 1/2 cup melted virgin coconut oil⁣
* 2 teaspoons apple cider vinegar⁣
* 1 teaspoon pure almond extract⁣
* Zest of half an orange⁣
* 2 tablespoons chia seeds⁣

Icing ingredients

* 1 cup powdered sugar⁣
* 4 to 6 teaspoons orange juice⁣
* Zest of half an orange⁣


To make the muffins: Preheat the oven to 375 degrees and line a muffin or cupcake pan with liners. Lightly grease.⁣ ⁣

In a large bowl, whisk flour, sugar, vegan collagen boost powder, baking powder, sea salt, and cinnamon. In a separate bowl whisk orange juice, coconut oil, vinegar, and almond extract. Add wet mixture to dry mixture and whisk to combine. Fold in orange zest and chia seeds.⁣ ⁣ ⁣

Fill prepared muffin pan with batter, filling each muffin cup about 2/3 way to the top. Bake for 25 minutes or until golden on top. Cool the muffins completely before icing.⁣ ⁣

To make the icing: Whisk the powdered sugar, lemon juice, water, and zest in a small bowl until smooth. Spread a thin layer of icing over each muffin.
